As far as nutritional foliage is concerned, collard greens seem to be the ultimate in comfort food. Served as a side to Carolina-style smothered ribs (recipe to come next week), well-cooked collard greens act as a flavorful addition that offer much more to the palate than most other vegetables simmered for an hour could.
Adding to this particular incarnation of a Southern staple are pieces of garlic, as well as chopped garlic scapes. This is the perfect way to use up scapes (the flowering stalks of garlic bulbs), given their predominance at this time of year. The dish is amped up by first sautéing the greens, scapes, and garlic in a hefty dose of bacon fat.
